To celebrate the continuation of our World Salad Series, we’re excited to share a recipe that fuses the bold flavors of Korean cuisine with the vibrant freshness of AeroFarms’ microgreens. Bibimbap, a beloved Korean dish known for its colorful assortment of vegetables and fiery gochujang sauce, is given a nutritious twist with the addition of our tender microgreens.
Korean Bibimbap:
Ingredients:
– 1 cup cooked sushi rice
– Assorted vegetables (such as carrots, cucumber, mushrooms, broccoli, pickled onions)
– 1 Sunnyside egg
– 2 Tbsp. Gochujang sauce
– ½ package of AeroFarms Micro Spicy Mix
– Kimchi and seaweed (optional)
Instructions:
- Prepare your sushi rice and layer on the bottom of bowl.
- Sautee the assorted vegetables until tender-crisp and arrange on top of rice.
- Cook egg Sunnyside up and place on top of vegetables.
- Garnish with a generous handful (about ½ package) of AeroFarms Micro Spicy Mix.
- Mix everything together with two tablespoons of gochujang just before serving to distribute the flavors evenly.
- Top with kimchi or dried seaweed for more flavor!
