Microgreens can contain considerably higher levels of vitamins and carotenoids—about 5X greater—than their mature plant counterparts, according to the United States Department of Agriculture. Micro Arugula in particular is a rich source of Vitamin C, beta carotene & Vitamin E.

We chose this varietal of arugula for its tender cotyledons, hardy stem and intensely peppery flavor profile. Grown in just a few short days, we optimized this varietal in our indoor growing environment to further kick up the spice while minimizing the bitter notes.
