Broccoli Slaw Salad

This broccoli slaw salad is a fresh and flavorful side dish that’s perfect for any occasion. The star of the salad is the broccoli microgreens. The microgreens are then mixed with a variety of other ingredients to create a delicious and nutritious salad. To add sweetness and crunch to the salad, shredded carrots, cabbage, apples, and watermelon radish are added to the broccoli microgreens. These ingredients provide a nice contrast to the texture of the broccoli and add a range of nutrients, including vitamins A and E, fiber, and healthy fats.

INGREDIENTS:
𝗦𝗮𝗹𝗮𝗱: 3 cups AeroFarms Micro Brocoli 1 cup carrots (shredded) 1 cup red cabbage (sliced) ¼ cup red onion (thinly sliced) ½ cup toasted sliced almonds (reserve some for garnish) ½ cup fuji apple (cut into small chunks) ½ cup watermelon radish (thinly sliced) 𝗗𝗿𝗲𝘀𝘀𝗶𝗻𝗴: ⅔ cup orange juice 2 tbsp miso 2 tbsp almond butter 1 shallot 1 tsp Dijon mustard
INSTRUCTIONS:
1. To make the dressing, place all the ingredients in a food processor and blend until smooth and creamy. Add more orange juice if needed to thin it out.

2. Toss all the salad ingredients in a medium bowl. Drizzle the dressing over and toss to combine.

3. Enjoy immediately.
