English Muffin Breakfast Sandwich

INGREDIENTS:
๐—ฆ๐—ฎ๐—ป๐—ฑ๐˜„๐—ถ๐—ฐ๐—ต 1 large handful of AeroFarms Micro Wasabi Mustard 1 tbsp olive oil 1 egg 1 English muffin 1 slice sharp cheddar cheese ๐—š๐—ฟ๐—ฒ๐—ฒ๐—ป ๐—š๐—ผ๐—ฑ๐—ฑ๐—ฒ๐˜€๐˜€ ๐—ฆ๐—ฎ๐˜‚๐—ฐ๐—ฒ: 1 cup AeroFarms Micro Spicy Mix 2 tbsp mayo ยผ cup Greek yogurt ยฝ clove garlic (minced) salt and pepper
INSTRUCTIONS:
1. Make the green goddess sauce by mixing together all the ingredients using a blender or immersion blender.

2. Heat olive oil in a nonstick pan over medium heat. Crack the egg into the pan and sprinkle with a small pinch of salt and pepper. Cook until the whites are completely set, and yolk is still slightly runny โ€” about 3-4 minutes.

3. While the egg cooks, toast the English muffin.

4. Assemble the sandwich by spreading a dollop of the sauce on the bottom half of the muffin. Top with a slice of cheese, the egg, and a handful of greens. Enjoy!
