Laab is a traditional Thai dish that is packed with flavor and texture. The dish features minced chicken that is cooked with a blend of aromatic spices, including cilantro, fish sauce, and lime juice. The chicken is then mixed with fresh herbs and vegetables, such as cucumbers, AeroFarms Micro Super Mix, and green onions, which add crunch and freshness to the dish. Chicken laab is typically served with sticky rice or lettuce cups, which provide a perfect base for the dish. The sticky rice adds a satisfying texture and flavor, while the lettuce cups provide a crisp and refreshing contrast to the spiciness of the chicken.
INGREDIENTS:
1 container of AeroFarms Micro Super Mix 1 pack of ground chicken ½ cup cilantro (chopped) 3 green onions (chopped) 1 large English cucumber (diced) 10 mint leaves ¼ cup fish sauce ¼ cup lime juice 2 tbsp glutinous rice (Jasmine rice will work) 2 tbsp vegetable oilINSTRUCTIONS:
1. Pre-heat oven to 350°F. Toast non-cooked rice in the oven for 10-15 minutes until evenly golden brown.
2. Allow the rice to chill and then grind to a coarse powder using a mortar and pestle or food processor. Set aside for later use.
3. In a sauté pan, heat up oil over high heat. Once it is hot, add the ground chicken and stir constantly to break up the chicken into small pieces while cooking. Once chicken is fully cooked, remove from the pan, drain the excess moisture from the pan and set aside at room temperature.
4. Into a mixing bowl add the cooked, chilled ground chicken and season with the fish sauce, lime juice, herbs, ground toasted rice powder, and the AeroFarms Micro Super Mix.
5. Serve with lettuce wraps, eat with rice, or serve as is.
